- 400g chicken;
- 300g rabbit;
- 240g green beans;
- 160g white beans;
- 65g finely chopped tomatoes;
- 100ml oil;
- 350g rice;
- 800ml water;
- 20g salt;
- 2g ground pimenton;
- 1.5g saffron.
Cut the meat into pieces (the size of an egg). Heat the oil, and when it is hot, add the meat. Once golden, add the tomato and stir until everything is lightly fried. Stir in the ground paprika. Then put the water, vegetables, saffron and salt. Leave to boil for 20 minutes on a medium heat. Add the rice, distributing it evenly in the paella. Turn the heat up for 10 minutes, and allow to cook for another 10 minutes on a low heat. Once the rice is dry leave to rest for a few minutes before serving.
