The Fideuà From Gandia is the second typical dish of Valencian gastronomy, where the Fideuà (red crustaceans) replace the rice.

- Crawfish 600 gr;
- Prawns 250 gr;
- Diced monkfish 600 gr;
- Noodles for Fideuà nº3 600 gr;
- Well chopped garlic;
- Grated tomato 200 gr;
- One smooth grated onion;
- Red paprika 1 small spoon;
- Rock fish stock 2 litres;
- Saffron;
- Extra virgin olive oil.
Place a “paella” (shallow pan with two handles, in native language) on the fire with the olive oil, heat it gently until gets hot. Fry well the prawns and the crawfish on it, then add the garlic, the paprika and the tomato and keep frying. Add following the diced monkfish and let it fry together for a while. Afterwards, put the stock and bring it to the boil, immediately add the Fideuà noodles (add salt at this point) and let it boil together at medium fire, so the dish will get good colour.
